Crunchy Autumn Hash with Apple Curls

Crunchy Autumn Hash

Time: 45 minutes

Serves: 4 adults (and 1 three-year-old as well as a serving for 1 lunch the next day)


5 Yukon Gold potatoes, diced

1/2 pound diced butternut squash

2 handfuls apple curls

1 handful pecans, chopped if desired

Enough olive oil/butter to keep ingredients from sticking

A few shakes of cinnamon

A sprinkle of sea salt


Heat a large fry pan with tall sides (I used an 11″ All Clad pan but it was tight) on medium heat.  Melt your choice of fat in the pain and add all ingredients.  Cover and saute, stirring occasionally, for at least 3 minutes or just until the potatoes are tender.  Spread the hash out on a half sheet pan and throw in an oven on broil.  Remove when desired color of brown.  Serve with sour cream if desired.
